Spice Basil Calamari
Ingredients
- 450 grams of squid the size of a small
- 3 stems of basil leaves
- 1 tablespoon lemon juice
- 3 pieces of red chilli, thinly sliced
- 1 tablespoon granulated sugar
- 1 teaspoon sour
- 125 cc of water
- ½ teaspoon salt and pepper
- Cooking oil to taste
The Paste
- 2 pieces of red chilli
- 1 stalk lemongrass, sliced
- 4 items hazelnut
- ½ tsp shrimp paste
- ½ teaspoon coriander
- 2 cm ginger
- 3 cloves of garlic
- 4 pieces of red onion
Marinate squid with lime juice, let stand briefly
- Heat oil and saute until fragrant spice paste then add the calamari and enter the water. Reduce heat, and cook until done (not to over cook)
- Add basil leaves, tamarind, chili. Cook until wilted basil leaves is wilt and gives that strong aroma
- then season with salt and pepper
