INDONESIAN SPICY GRILLED KALIMANTAN CHICKEN

Ingredients

  • 1 whole chicken
  • 3 pcs of candelnut
  • 6 shallots
  • 6 clove garlic
  • 1 thumb of ginger
  • 5 red chili
  • 4 chili padi (it depends how spicy you like, this is optionals)
  • 1 stalk of lemon grass bruised
  • 1 teaspoon vinegar
  • 1 tablespoon sugar
  • 20 gr unsalted butter or margarine
  • water

  • 1 ayam utuh
  • 3 bh kemiri
  • 6 butir bawang merah
  • 6 siung bawang putih
  • 1 ibu jari jahe
  • 5 buah cabai merah
  • 4 cabai rawit  (tergantung seberapa pedas Anda suka, ini opsional)
  • 1 batang serai, memarkan
  • 1 sdt teh cuka
  • 1 sdm gula pasir
  • 20 gr mentega tawar atau margarin
  • air 50 ml

Methods

  1. use a mortar or a pestle to bruised the garlic, chili, ginger, candlenut, lemongrass, garlic and shallots.
  2. heat the butter ( important to use a low heat for this recipe) and cook the bruised aromatic, using low heat keep on stirring (very important) until become oily, and has change the colors
  3. It will take around 30-40 minutes for the aromatic become oily,  then you add the chicken mix well, add a bit of water to give more moist, mix well and keep stirring. Once the chicken is cooked through, add the sugar and vinegar. keep on cooking until the flavor blend well together for another 10 minutes.
  4. once done, set aside. next step is to grilled them. if you don't have any griddle, just use regular pan, seared both side
