CARROT AND DAIKON SALAD
This salad is well know at HOKAHOKA BENTO, we love the simple mix of good vinegar and creamy mayonnaise
Ingredients
- 100 gr sliced/shaved carrot
- 100 gr sliced/shaved daikon
- 100 gr slice cabbage
- 2 tablespoon of white sugar
- 1 cup of good vinegar (I add 2 tablespoon of apple vinegar)
- a dash of salt
- and a couple cube of ice
for the mayonnaise
- 1 1/2 cup of mayonaise
- 2 tablespoon of bottle chili or shiracha
- 1 table spoon of apple vinegar
- 1/2 teaspoon of lemon juice
- 1 teaspoon of powdered sugar
Instructions
- mix shaved daikon, carrot and cabbage with salt, sugar and vinegar and cube of ice (you want them to be sour and sweet at the same time)
- place them on the chiller for at least 8-12 hours
- Make your mayonnaise and keep it aside, serve with the salad when is ready. (drain the salad from the vinegar and serve with mayonnaise)
