Basil Squid

INGREDIENTS

  • 450 grams of squid the size of a small
  • 3 stems of basil leaves
  • 1 tablespoon lemon juice
  • 3 pieces of red chilli, thinly sliced
  • 1 tablespoon granulated sugar
  • 1 teaspoon sour
  • 125 cc of water
  • ½ teaspoon salt and pepper
  • Cooking oil to taste
  • The Paste:
  • 2 pieces of red chilli
  • 1 stalk lemongrass, sliced
  • 4 items hazelnut
  • ½ tsp shrimp paste
  • ½ teaspoon coriander
  • 2 cm ginger
  • 3 cloves of garlic
  • 4 pieces of red onion

INSTRUCTIONS

  • Marinate squid with lime juice, let stand briefly
  • Heat oil and saute until fragrant spice paste then add the  calamari and enter the water. Reduce heat, and cook until done  (not to over cook)
  • Add basil leaves, tamarind, chili. Cook until wilted basil leaves is wilt and gives that strong aroma
  • Then season with salt and pepper
  • Serve
