Asian chicken salad sandwiches
INGREDIENTS
- 1/2 cup cider vinegar
- 3tbsp sugar
- 2/3 cup mayonnaise
- 1 cucumber halved seeded thin sliced
- 2 tablespoon soy sauce
- 1 tablespoon toasted sesame oil
- 1 tablespoon grated ginger
- Salt n pepper
- 1 rotisserie chicken 4 kg, meat shredded to pieces
- 6 scallion, sliced thin
- 2 teaspoon sesame seeds
- 8 slices crusty bread, lightly toasted

INTRUCTIONS
- Combine vinegar and sugar in a medium microwave safe bowl, microwave on high powe until sugar to dissolve (u can reduce at stove as well) then add cucumber slices to the bowl combine well
- Whisk mayonnaise , soy, sesame oil,n ginger together then season with salt n pepper. Toss mayonnaise mixture with chicken pieces, scallion and sesame seeds and season again with salt n pepper
- Arrange 4 slices of bread on a platter. Add equal amounts of chick salad and on top with pickled cucumbers and second pieces of bread. Serve
